This is a traditional tomato topping for pizza. Absolutely delicious! This is for the traditional Margherita style pizza. Just add mozzarella, basil, and maybe a sprinkling of Parmesan cheese to the final pizza to make a good vegetarian pizza – my favourite! You can also can this topping for winter.
Ingredients
- Tomatoes
- garlic
- Fresh basil
- salt and freshly ground black pepper
- maybe some thyme and oregano, if you have it
- olive oil
Instructions
- This sauce is very easy to make – you just take a lot of tomatoes – a lot! As they shrink down considerably.
- Cut into chunks if they are very large. Place in a wide dish or baking tray.
- Add some fresh herbs such as basil, anoregano, and thyme for an authentic Italian flavour. I add a few handfuls as I like the flavour.
- Add 2 or 3 whole heads of garlic for a large tray of tomatoes. Just crush and remove the skins – no need to chop.
- Add salt and freshly ground black pepper – you can always add more later so don’t over do it.
- Drizzle over a little olive oil.
- Place the tray in a conventional or a sun oven and cook for about two hours stirring once or twice so they don’t stick. Cook until well reduced. This may take longer than two hours, depending on the Sun and how many tomatoes – the principle is just to condense the source and cook the ingredients.
- The sauce should be nice and thick – taste and add more salt and black pepper if necessary.
- Mash or blend the sauce if necessary.
- At this juncture you can either freeze the sauce in Ziploc bags – just portion out how much for the size of pizza. Or you can can it.
- To can – choose jars the right size for how much you would need for one pizza. Add 1 teaspoon of bottled lemon juice for a half pint. Boil for 35 minutes on a rolling boil and then label with the date and contents.

I like to make my own pizza dough, but you can buy this from the supermarket . Just spread the pizza topping on top and layer with mozzarella cheese, fresh basil leaves, maybe some extra tomatoes, and a sprinkling of Parmesan cheese if you have it. Freshly ground black pepper is also good on top. Delicious. You can also use this sauce as a pasta sauce.
